Opened a can of black beans with the intention of making some protein balls for a healthy snack only to be very disappointed to find out these were seasoned so I made this instead!!
1 can of black beans – rinsed and drained
1 can of rotel
1 Avocado diced
About 1/2c of frozen corn
Great on the side or by its self!!
chopped red and yellow pepper
drizzle with a little balsamic vinegar
We added a little crab meat for fun tonight!!
From The Ultimate Reset3 TBSP Rice Vinegar
2 TBSP Fresh lime juice
2 TBSP Sesame Oil
1 1/2 tsp finely chopped fresh ginger – I used the one out of a jar.
1/2 head Napa Cabbage – shredded – I used whatever the store had.
1/2 Med carrot shredded
1/4 Med red onion, thinly sliced
2 green onions, thinly slicedIt also called for 2 TBSP Bragg Liquid Aminos and 2 TBSP Cilantro but I don’t have the Liquid Aminos and I had run out of cilantro.
Put it all in a bowl and mix well!!
Let salad marinate for at least 15-20 min before serving.
